Some dinners you eat. Hot pot you do. A bubbling pot lands in the middle of the table, everyone cooks their own food in it, and two hours disappear. If you've never been, here's the crash course — and where to try it in Houston.
What it actually is
Hot pot (火锅, huǒguō) is a communal simmering pot of flavored broth. You get a plate of thin-sliced meats, seafood, vegetables, tofu, and noodles, and you cook each bite yourself — seconds per slice, minutes per root vegetable. The pot never stops; the conversation neither.
The two broths that matter
Most Texas hot pot spots let you split the pot in half (鸳鸯锅, "mandarin duck pot"):
- Mala (麻辣) — the red side. Sichuan-style: dried chilies, Sichuan peppercorns, beef tallow. Numbing, spicy, addictive. This is the one people cross town for.
- Clear broth — the white side. Mushroom, tomato, or plain bone broth. The cooldown lane — and where the vegetables shine.
Order the split pot your first time. Everyone's happy.
What to order first
- Thin-sliced ribeye or lamb — swish 10 seconds, dip, eat. The gateway bite.
- Fish balls / shrimp paste — bouncy, savory, impossible to mess up.
- Leafy greens (tong ho, bok choy) — 30 seconds, done.
- The dipping sauce — build it at the sauce bar: sesame paste + garlic + cilantro + a spoon of the mala oil if you're brave.
House rules (so you don't get side-eye)
- Don't fish around in the pot with your personal chopsticks — use the communal ladle or the "serving" pair.
- Cooked food goes on your plate, not back in the pot.
- Pace yourself. The pot wins every endurance contest.
